I love Bananas! Unfortunately my husband doesn’t like them, and since he does the food shop most of the time, its not often I have them. Occasionally I ask him to buy me some. Recently, after asking him to get some at the market, he came back home with the Green bananas for me (he knows I like the just ripe, still slightly green bananas), and as he passed me a bunch of overripe bananas he said ‘ I don’t know what you are going to do with them but the lady at the market had given them for free because they were too ripe to sell’. I jumped for joy ‘Perfect!’ I said with a big smile ‘I fancied a banana loaf’.
Banana Loaf or Banana Bread as some call it, is one of those recipes you can make really unhealthy, or for a few changes, you can make it really healthy. For example use maple syrup instead of sugar, coconut oil instead of butter or vegetable oil, and almond milk instead of cow’s milk. The best part is the healthier recipe tastes much better! Why not give it a try!
Healthy Banana Bread Recipe
- 60g Coconut Oil
- 130g Maple Syrup
- 300G mashed banana (preferably overripe)
- 60g almond milk
- 75 g chopped walnuts
- 230g whole wheat flour (I used ‘marine de blé, semi complete T80’ I live in Belgium!)
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 banana for decoration
Preheat oven to 165° Celsius and grease a loaf pan.
In a small saucepan melt the coconut oil and maple syrup together until warm.
In a Kenwood, whisk together the oil and maple syrup for 1 minute.
Using a beater, add the eggs, mashed bananas and almond milk.
Add the baking powder, vanilla, salt and cinnamon, and blend. Add the flour. Finally gently fold in the walnuts.
Pour the batter into your greased loaf pan. Split one banana in half lengthways, and place lightly on top.
Bake for 55 to 60 minutes, or until a toothpick inserted into the centre comes out clean. Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
In Scotland we serve Banana Bread with a smearing of butter – ok so that might take away all the healthy aspects of this bread, but it sure is delicious!
